11 Easy Costco Dinners for Busy Moms

Let’s Be Honest About Dinner…

Some nights I make Pinterest-worthy meals- everything fresh, colorful, and balanced.

MOST nights? I’m serving something straight from a Costco container while my toddlers dance around the kitchen banging pots and pans.

And honestly? Both count as “feeding my family.”

I shared first my top toddler approved snacks from Costco– now let’s shift to dinners!

As a twin mom, I’ve learned that not every meal has to be homemade to be good. Costco’s ready-made meals have saved me more times than I can count- those chaotic evenings when everyone’s hungry, bedtime is creeping up, and the sink already looks like a war zone.

So here it is: my list of Costco’s best easy dinners that taste great, take minutes to make, and don’t leave you with a pile of dishes.

Bonus- my twins actually eat these without a full negotiation session.

These Costco meals are toddler-approved!

1. Udon Noodle Bowls

These are my emergency dinners – the kind that feel like takeout but don’t require an app or a delivery fee. Costco’s refrigerated Udon Noodle Bowls cook up in minutes and taste shockingly good.

How I level it up:

  • Toss in frozen broccoli or peas while heating for a veggie boost.
  • Add leftover rotisserie chicken or Aidells meatballs for protein.
  • Top with sesame oil and green onions if I’m pretending to be fancy.

2. Premade Meatloaf & Mashed Potatoes – Cozy Comfort Food in Minutes

There’s something nostalgic about this one. It tastes like homemade comfort food without the oven time or the crying while mashing potatoes.

Upgrade ideas:

  • Add roasted carrots or green beans on the side (Costco’s frozen veggies are perfect).
  • Heat it up with a little BBQ sauce or ketchup for extra flavor.
  • Use leftovers for meatloaf sandwiches with cheese the next day.

Twin tip: Cut the slices small before reheating- they warm faster and stay juicy.

3. Mac & Cheese

Costco’s mac and cheese is chef’s kiss. Creamy, cheesy, and somehow better than anything I could make from scratch.

Make it extra:

  • Stir in frozen spinach, peas, or chopped broccoli.
  • Mix in diced chicken or Aidells Teriyaki Meatballs for a protein hit.
  • Sprinkle breadcrumbs on top and bake for that “homemade” look.

What toddler doesn’t like mac & cheese?! This is almost a guaranteed winner of a dinner.

4. Kirkland Signature Garlic Butter Shrimp

This one feels way too easy for how good it tastes. The shrimp come already seasoned in rich garlic butter sauce- you literally just heat them up and pretend you spent all afternoon cooking.

How I serve it:

  • Over angel hair pasta or jasmine rice
  • With a squeeze of lemon and side of roasted veggies
  • Or wrapped in tortillas for quick shrimp tacos

It’s one of those “date night at home” meals that somehow also works for toddlers- buttery, flavorful, and fast.

5. Kirkland Chicken Alfredo

This one feels indulgent, but it’s actually a mom miracle meal.

How I serve it:

  • Add steamed broccoli or spinach.
  • Sprinkle parmesan and black pepper on top.
  • Serve with garlic bread (Costco’s frozen baguettes are perfection).

Mom hack: Add a splash of milk when reheating- it keeps the sauce creamy and easier for little ones to eat.

6. Aidells Teriyaki & Pineapple Meatballs

Sweet, savory, and zero complaints from my toddlers.

My twins both LOVE meatballs. I’m not sure what it is about toddlers and meatballs- but I’m not mad at it.

My favorite combos:

  • With white rice and roasted broccoli.
  • Mixed into stir-fry veggies and noodles.
  • Sliced into Hawaiian rolls for sliders.

Bonus: They also make a great snack!

7. Kevin’s Cilantro Lime Chicken

I love this one because it tastes like something from a nice restaurant but takes five minutes to make.

How I serve it:

  • Over rice with black beans and avocado.
  • In warm tortillas with a dollop of sour cream.
  • With a side of roasted corn for an easy weeknight win.

It’s paleo, dairy-free, and super clean – so it’s one of those rare meals that feels “healthy” without feeling like punishment.

8. Sabatino’s Paleo Basil & Cracked Black Pepper Chicken Sausages

These are my go-to when I need protein fast. They’re flavorful, juicy, and my toddlers actually like them.

Quick meal ideas:

  • Slice into pasta or stir-fry veggies.
  • Serve with roasted potatoes and peppers.
  • Air fry for crispy edges

Mom hack: I freeze half the pack and defrost one at a time when I need a 5-minute dinner.

9. Kirkland Garlic Pepper Drumsticks

You know those nights you want to feel like you cooked, but you don’t actually want to cook? These are for that.

They come pre-seasoned and ready for the oven or grill- juicy, garlicky, and so flavorful.

Serve with:

  • Costco mac and cheese or mashed potatoes.
  • Corn on the cob or a salad kit for balance.

They look impressive, but you did almost nothing. 10/10.

10. Rana Italian Sausage Ravioli

This one’s perfect for when everyone’s starving now.

How I make it a meal:

  • Toss with marinara and a handful of spinach.
  • Add sautéed mushrooms or cherry tomatoes for color.
  • Sprinkle parmesan and call it done.

It cooks in under 5 minutes, and with the sausage mixed in with the cheese, you don’t have to feel guilty for serving pasta yet again.

11. Kirkland Five Cheese Tortelloni

This is comfort food for all ages.

Ways to serve:

  • Toss with butter and a little garlic salt.
  • Mix with pesto for flavor (and to trick the kids into eating something green).
  • Chill and serve as a pasta salad for lunch the next day.

It’s soft, filling, and the perfect “I’m done for today” dinner.

The Mom Takeaway: Dinner Doesn’t Have to Be Complicated

If there’s one thing I’ve learned since having twins, it’s that done is better than perfect. Costco’s ready-made meals are my safety net- the difference between feeding everyone and melting down at 6:30 PM.

These dinners taste good, save time, and keep my family happy, which, at the end of the day, is really the goal.

So next time you’re at Costco, grab a few of these for your fridge or freezer. Because when life gets chaotic (and it will), it’s nice to know dinner’s already handled.
