Servings: 24 cupcakes
Course: Dessert
Cuisine: American

Ingredients

  • 1 box Funfetti cake mix
  • Ingredients listed on the cake mix box typically eggs, water, and vegetable oil
  • 24 flat-bottom cake cones
Frosting
  • 1 container vanilla frosting
  • Rainbow sprinkles
  • 24 maraschino cherries optional

Method

  1. Preheat the oven according to the directions on your Funfetti cake mix box (usually 350°F).
  2. Prepare the cake batter according to the package directions.
  3. Place one cake cone into each cup of a standard muffin tin.
  4. Fill each cone about halfway to two-thirds full with batter. Don't overfill. The batter rises while baking.
  5. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cupcakes to cool completely.
  7. Pipe or spread vanilla frosting onto each cupcake to resemble a scoop of ice cream.
  8. Top with rainbow sprinkles and an optional maraschino cherry.
  9. Serve and enjoy!

Notes

  • Fill the cones only halfway to two-thirds full.
  • Bake in a muffin tin so the cones stay upright.
  • Let cool completely before frosting.
  • Pipe the frosting high for an ice cream cone look.
  • Store upright for the prettiest presentation.
Storage: Store cake cone cupcakes covered at room temperature for up to 2 days. If refrigerating because of the frosting, let them sit at room temperature for about 30 minutes before serving. These cupcakes are perfect for making the day before a birthday party or summer cookout.
