Method
- Preheat oven to 425°F.
- Line a rimmed sheet pan with parchment paper or foil.
- Pat the salmon dry and place skin-side down on the sheet pan.4 salmon fillets
- In a small bowl, mix together: olive oil, bottled lemon juice, garlic powder, paprika, Italian seasoning, salt and pepper to taste2 tbsp olive oil, 2 tbsp bottled lemon juice, 1 tsp garlic powder, 1 tsp paprika, 1 tsp Italian seasoning, Salt and pepper to taste
- Brush or spoon the mixture evenly over the salmon.
- Bake for 10–14 minutes depending on thickness.
- Broil for 1–2 minutes at the end for slightly crispy edges.
- Top with parsley, feta, or extra lemon juice before serving if desired.
Notes
- Don’t overcrowd the pan or the salmon may steam instead of roast.
- Salmon is done when it flakes easily with a fork.
- Great served with couscous, roasted vegetables, or Greek fries.
