Easy Lemon Herb Salmon

Ingredients
  

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp bottled lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 425°F.
  2. Line a rimmed sheet pan with parchment paper or foil.
  3. Pat the salmon dry and place skin-side down on the sheet pan.

  4. In a small bowl, mix together: olive oil, bottled lemon juice, garlic powder, paprika, Italian seasoning, salt and pepper to taste

  5. Brush or spoon the mixture evenly over the salmon.
  6. Bake for 10–14 minutes depending on thickness.
  7. Broil for 1–2 minutes at the end for slightly crispy edges.
  8. Top with parsley, feta, or extra lemon juice before serving if desired.

Notes

  • Don’t overcrowd the pan or the salmon may steam instead of roast.
  • Salmon is done when it flakes easily with a fork.
  • Great served with couscous, roasted vegetables, or Greek fries.
